9️⃣9️⃣ Double Ninth or Chongyang Cake Recipe
Double Ninth Festival cakes are usually made for parents, wishing them health and longevityChongyang cake is also called Flower Cake, Chrysanthemum Cake or Five Coloured Cake. The meaning of having this cake is to "keep being successful and to have a long life until you're 99.
The most traditional Chongyang cake has nine layers of red bean paste.
Today we're going to try and make a simple version with 1 layer or 2.
Ingredients:
- 180g(1+1/2 cup) long-grained non-glutinous rice (Taiwan) / Indica rice flour
- 150g(1+1/4 cup) glutinous rice flour (get yours here)
- 35g(1/3 cup) powdered sugar
- 30g(1+1/2 tbsp) maple syrup
- 140g(2/3 cup) water
- 20g(1+1/2tbsp) coconut oil
- 200g red bean paste (get yours here)
- dried fruit and nuts
- bamboo steamer
Instructions:
- Mix long-grained rice flour with glutinous rice flour.
- Add coconut oil, powdered sugar, maple syrup and 140g of water into the flour.

Combine together to form coarse grains, then sift twice to remove any lumps. (Use a spoon or fingers to press the coarse powder, I think the fastest way to press it with your fingers)

You must sift again to make sure the mixture is really fine.

Lay a piece of cheesecloth over a bamboo steamer.

Pour half of the powder in the bamboo steamer, do not compact, use a spoon to gently smooth the surface. Spread evenly.
- Put water in a pot and bring it to a boil. Steam for 5 minutes on high heat
- Remove the steamer and add red bean paste as a layer
- Pour in the remaining powder and smooth
it out, remember not to compact it.
- You can repeat this step to get more layers of the red bean paste.
11. After you have gotten to the desired number of layers. Prepare nuts and dried food to put on it.
13. Spray water on the surface to prevent cracking.
14. Finally steam for 15min and you're done!
